Lemon Delight has been a favorite in my family for years. It often makes an appearance at family get-togethers and holiday gatherings, and it always goes fast. This homemade lemon dessert is one my favorites. You'll love the delicious pecan crust topped with layers of cream cheese, pudding, and Cool Whip.
It’s a light and refreshing dessert which is always nice after a big meal.
Don’t let those layers scare you, it’s super-easy to make.
Ingredients:
Layer 1: Crust
1 cup flour
1 cup pecans, chopped
1/2 cup butter, melted
1 tablespoon sugar
Combine flour, chopped pecans, sugar, and melted butter. Stir together until well-blended and crumbly. Press into a 9x13 baking dish. Bake at 350 for 15 -20 minutes. Cool completely before completing the following steps.
Layer 2: Cream Cheese Layer
8oz block cream cheese
1 cup powdered sugar
Combine cream cheese and sugar together. Mix with an electric mixer. Spread over the cooled crust
Layer 3: Lemon Layer *mix pudding while crust bakes
2 small packs lemon pudding
3 cups milk
Mix together the pudding and milk. Place in refrigerator until set.
*I usually mix my pudding together while the crust is baking and let is sit in the refrigerator until needed.
Layer 4: Topping
1 container Cool Whip
Pecans chopped for topping
Spread cool whip evenly over the lemon layer and sprinkle with chopped pecans.
Refrigerate for at least 6 hours before serving.
